TECNALIA is involved in developing the first pink EVOO: innovation to transform the dining experience
Innovation in the food sector is not just about improving processes or developing healthier, more sustainable products. It also involves creating new experiences that can surprise, excite and create a different kind of connection with people. In this context, TECNALIA has been involved in developing the first pink extra virgin olive oil (EVOO), a pioneering initiative that has reinterpreted one of the most iconic products of Mediterranean cuisine.
The project was launched in collaboration with partners from the food sector and aims to explore new sensory experiences centred on food. The result is an EVOO that retains its characteristic essence and quality, while incorporating a distinctive feature that changes the consumer’s perception from the start: its colour.
Natural pigments
This innovative development was carried out in collaboration with Spanish brand L’Aurea, and represents a step forward in the transformation of food products into experiences with greater added value: the first pink extra virgin olive oil, produced using vegetable pigments from beetroot that only change its appearance, without altering its flavour, aroma or organoleptic properties.
- This project was carried out in collaboration with the Polytechnic University of Madrid, and has resulted in Aurelia, a product made with organic, early-harvest Picual extra virgin olive oil from Jaén, changing a traditional product into something that is truly distinctive, where the oil transcends its usual use to become a gastronomic, aesthetic, expressive experience.
