TECNALIA innovates with Bizkarra: jams with no added sugar

TECNALIA has developed, in collaboration with BIZKARRA bakeries and pastry shops, a lemon marmalade using yacon root, an Andean tuber, as a sweetener.

Bizkarra has taken another step in the innovation of its products by creating jams with no added sugar that use yacon root, an Andean tuber with many properties, as a sweetener.

Collaboration with BIZKARRA

This collaboration has enabled Bizkarra to create jams with no added sugar, avoiding intense sweeteners and using only natural vegetable ingredients. Initially, a lemon marmalade was created that fulfilled all the organoleptic and nutritional criteria they were looking for. Then, as part of the AKTIBAL project, the recipe was used for all the sugar-free jams that are made at this bakery.

The range includes six different varieties: apricot, plum, raspberry, strawberry, lemon and mandarin, which can already be found in both physical and online shops of these bakeries.

The jams are made in a traditional way, with fresh fruit and two ingredients that replace sugar in all its properties: natural vegetable fibre to get the texture and colour, and yacon root as a sweetener to achieve the flavour, the latter being TECNALIA’s main contribution to the project.
